The Assam component comes from second flush production — the June harvest, a period of strong, sustained growth that yields leaf of exceptional body and depth. Brewing Note: Use freshly drawn, fully boiling water — Irish breakfast tea is built for the full 100°C and needs nothing less. Measure a well-heaped teaspoon per cup and steep for four to five minutes, or longer if you prefer your tea on the stronger side; the blend is robust enough to take it. If drinking with milk, add it after the tea has been poured — this lets you judge the strength before adjusting. The leaves will not reward re-steeping in the way that a whole-leaf oolong might, so brew fresh each time and give it the full steeping time it deserves.
